Always firm and fluffy, never sticky. Natural source of 6 essential nutrients, including niacin, thiamin, folate, and vitamin B6 (ordinary white rice qualifies only as a source of carbohydrates). Converted rices natural milling method transfers 80 percent of the nutrients from the husk and bran layers into the grain itself. Low glycemic index (GI); foods with a low GI cause a more gentle rise in blood sugar allowing the body to feel satisfied longer and have a more sustained source of energy. No transfats.
Preparation & Cooking
To yield 60 portions 125 mL (1/2 cup) cooked rice : Combine 2L (8 cups) of rice, 3.75 L (15 cups) of water, 75 mL (1/3 cup) butter or margarine and 30 mL (2 Tbsp.) salt in a stockpot. Stir well. Bring to a boil. Cover tightly. Reduce heat to MED LOW. Cook until tender. Approximate cooking time is 20 to 25 min. Transfer to a steam pan along with all remaining liquid (which will soon be absorbed). Cover and keep hot. Fluff with fork before serving.
